All of the following recipes are gluten-free, and can be prepared as vegetarian dishes.

Rhubarb Blueberry Pie

 

Rhubarb Pie Recipe

Ingredients:

1 & 1/2 cup finely ground rice flour 1/4 cup finely ground millet flour 1 tsp salt 1 cube of butter 2 tsp xanthan gum 1 1/2 cup of cane sugar 4 cups of rhubarb 1 cup of blueberry 3 tsp corn starch 1 small egg 1/2 cup cold water

 

Preparation 1. Mix millet flour, rice flour, xanthan gum, salt in medium bowl.  Cut butter into small pieces, and press butter and flour mixture between finger until butter is consistent with mixture.  Start adding small amounts of water while pressing the dough together, until it forms  into a ball.   Spread a small amount of rice flower onto the area where you will roll dough.  Use clear plastic rap in-between roller and dough while rolling out dough to rollout more evenly.  Roll out half the dough very slow and gently so that it does not tare.  Place in pie tin. 2.  Prepare rhubarb by cutting into 2 inch pieces.   Place rhubarb in pan add 1/4 cup of water, 1 cup of sugar, and 3 tsp of corn starch.   Cook slowly with lid on for 15 minutes, stirring occasionally.  When the consistency of the  rhubarb mixture is thickened, add blueberries and pour into prepared pie crust. 3.  Rollout remaining dough, place on top of pie tin that is filled with the pie filling.   Cut five two inch slits in dough at a one inch radius from the center of the pan.  Beat egg and brush light coating on top of crust.   Sprinkle one tbs of sugar evenly on top of egg coating. 4.  Pre-heat oven to 375 degrees.  Once oven temperature is met, place pie in oven for 40 minutes.  You may want to place a cookie sheet beneath the pie to catch any overflow from the pie while it cooks.   When it is finished, let the pie stand for 20 to 30 minutes before cutting.  Enjoy.

Supreme Pizza

Supreme Pizza Millet recipe

 

Ingredients 3/4 cup finely ground rice flour 1/8 cup finely ground millet flour 1 tsp salt 1/2 cube of butter 2 tsp xanthan gum 1/4 cup pizza sause 1/8 cup cold water 14 inch pizza pan pizza toppings Preparation 1. Mix millet flour, rice flour, xanthan gum, salt in medium bowl.  Cut butter into small pieces, and press butter and flour mixture between finger until butter is consistent with mixture.  Start adding small amounts of water while pressing the dough together, until it forms  into a ball.   Spread a small amount of rice flower onto the area where you will roll dough.  Use clear plastic rap in-between roller and dough while rolling out dough to rollout more evenly.  Roll out the dough very slow and gently so that it does not tare.  Place on pizza pan. 2.  Pre-heat oven to 475 degrees.  Bake crust for five minutes before adding toppings, then take out of oven. 3.  Prepare pizza toppings, cook meat and sauté vegetables. 5.  Spread a fine layer of pizza sauce on crust and add toppings.  Place pizza in oven for 15 minutes.   When it is finished, let the pie stand for five minutes or longer before cutting. Enjoy.

 

Millet Recipe Chicken Pot Pie

 

 

Ingredients 3/4cup finely ground rice flour 1/8 cup finely ground millet flour 1 tsp salt 1/2 cube of butter 2 tsp xanthan gum 2 cups of chicken 2 cups of vegetables 2 cups chicken gravy Preparation 1. Mix millet flour, rice flour, xanthan gum, salt in medium bowl.  Cut butter into small pieces, and press butter and flour mixture between finger until butter is consistent with mixture.  Start adding small amounts of water while pressing the dough together, until it forms  into a ball.   Spread a small amount of rice flower onto the area where you will roll dough.  Use clear plastic rap in-between roller and dough to rollout more evenly.  Roll out the dough very slow and gently so that it does not tare. 2.  Pre-heat oven to 375 degrees. 3.  Mix chicken, vegetables, and gravy and put into pie pan. 4.  Put the rolled out dough on top of pie pan with ingredients. 5.  Once oven temperature is met, place pie in oven for 30 minutes.  You may want to place a cookie sheet beneath the pie to catch any overflow from the pie while it cooks.   When it is finished, let the pot pie stand for 15 minutes or longer before cutting.  Enjoy.

Banana Bread

Millet Recipe Banana Bread

Ingredients

1/2 cup finely ground buck wheat 1 cup finely ground rice flour 1/4 cup finely ground millet flour 1/2 tsp salt 1 tsp baking soda 2 tsp baking powder 2/3 cup of cane sugar 1/3 cup olive oil 2 tsp xanthan gum 2 eggs 1/2 cup of mashed bananas Preparation 1.  Beat eggs in bowl, and add remaining ingredients and mix together until they are consistent. 2.  Put mixture in bread loaf pan. 3.  Pre-heat oven to 350 degrees. 4.  Place pan in oven for 1 hour and 10 minutes. 5.  Let bread cool before taking it out of pan.  Enjoy.
